Rationale: It has been reported that the quality of carbohydrates plays a more significant role than the total amount of carbohydrates consumed as a percentage of dietary energy. This cross-sectional study was designed and conducted to determine the relationship between body weight and carbohydrate quality among university students.

Methods: The sociodemographic characteristics and physical activity levels of 330 university students were assessed. Body mass index (BMI) and waist-to-hip ratios were calculated. Energy and nutrient intakes were determined from participants’ daily food consumption records and evaluated according to the Turkish Dietary Guidelines (TÜBER). The ratio of solid carbohydrates (CHO) to total CHO, dietary fiber, glycemic index, and the ratio of whole grains to total grains were used to calculate the Carbohydrate Quality Index (CQI), and participants were divided into five quintiles based on their CQI. Relationships between obesity risk and CQI as well as its subparameters were tested using binary logistic regression analysis

Results: Participants in the fifth quintile had the highest dietary fiber intake byTÜBER, with a fulfillment level of 146.90% (129.26–168.00). Among the five quintiles based on CQI, a statistically significant difference was observed only in the dietary fiber adequacy level (p<0.001). It was found that a 1-gram increase in dietary fiber intake (p=0.001) and a 1-unit increase in CQI (p=0.009) decreased the risk of obesity by 0.026 and 0.088 times, respectively; in contrast, a 1-unit increase in glycemic index (p<0.001) increased the risk of obesity by 0.0010 times.

Conclusion: The study results revealed that the consumption of low-glycemic-index foods and dietary fiber are important factors in determining CQI. It was concluded that raising awareness about the CQI in weight management and conducting similar studies in this area are necessary.
