COMPARISON OF MIND DIET ADHERENCE AND POLYPHENOL CONTENT BETWEEN SUMMER AND WINTER MENUS IN A NURSING HOME

Rationale: The aim of this study was to compare the MIND (The Mediterranean-DASH Intervention for Neurodegenerative Delay) diet adherence score and polyphenol content of one-month winter and summer menus offered in a nursing home, and to evaluate the potential impact of seasonal menu variations on diet quality. 

Methods: The energy and macro-micronutrient values ​​of menus were obtained via Nutrition Information System V.8.1. Menus were evaluated according to the components of the MIND diet, and a total score was calculated to determine the MIND diet compliance scores of the menus. Content of flavonoids, lignans, phenolic acids, stilbenes, other polyphenols, and total polyphenols was evaluated with Phenol-Explorer 3,6

Results: The adherence score of the winter menu to the MIND diet was found to be 6.5;  while the summer menu scored 5.0. No significant difference was found between the polyphenol contents of the summer and winter menus, as they were similar to each other (p>0.05). The total polyphenol content of the winter and summer menus was determined to be 2032.4±1880.80 mg and 2136.8±1467.90 mg, respectively with the most abundant polyphenol types being flavonoids (317.3±292.01 mg, 289,1±102.49 mg) and phenolic acids (223.38±195.39 mg, 244.6±69.70 mg). 

Conclusion: The findings indicate that both winter and summer menus provided comparable levels of polyphenols, with no significant seasonal variation, while the winter menu demonstrated slightly higher adherence to the MIND diet. These results suggest that, although the overall polyphenol content of institutional menus may be maintained across seasons, improvements in menu planning are needed to enhance adherence to neuroprotective dietary patterns such as the MIND diet.
