NATIVE BRAZILIAN FISH MEALS ELICIT A MORE FAVORABLE POSTPRANDIAL METABOLIC RESPONSE THAN LEAN BEEF IN HEALTHY ADULTS

Rationale: Consumption of muscle foods acutely influences postprandial glycemia, lipemia, gut hormones, and inflammatory responses. However, it remains unclear how native Brazilian fish modulate postprandial metabolism despite their increasing nutritional and sustainable production systems.
Methods: Healthy adults (n=30; 25.2±5.1 years; BMI 23.3±3.1) completed a randomized crossover trial (NCT06757608). Three standardized test meals (1.5 g protein per BMI unit; lean beef, sardine, tambaqui) were consumed after an overnight fast, with a 2-week washout. Capillary blood (500 µl) was collected from baseline to 300 min postprandial period. Outcomes included plasma glucose, insulin, triglycerides, non-esterified fatty acids (NEFA), GLP-1, GIP, ghrelin, PYY, and IL-6. Postprandial responses were analyzed using mixed-effects models.
Results: Intake of native Brazilian fish meals led to lower postprandial plasma glucose at 300 min compared with beef (tambaqui: 0.92-fold; sardine: 0.95-fold; beef: 0.96-fold; p<0.0001). Insulin responses differed by protein source, with an earlier and lower peak for tambaqui (1.7-fold at 60 min) compared with sardine and beef (1.9- and 2.2-fold at 120 min, respectively) p<0.0001. Incretin responses were greater after fish meals, with higher GLP-1 peaks for tambaqui (1.96-fold) and sardine (1.90-fold) than for beef (1.78-fold at 120 min), p<0.05. GIP concentrations were also higher after tambaqui (2.14-fold at 120 min) than sardine (1.7-fold) and beef (1.6-fold), with a significant interaction (p<0.05). Triglycerides, NEFA, ghrelin, PYY, and IL-6 showed no differences between meals.
Conclusion: These preliminary results suggest that native Brazilian fish, particularly Amazonian tambaqui, elicit a more favorable postprandial metabolic response than lean beef. These findings may contribute to promoting metabolic health and supporting more sustainable diets.
